A Little Watermelon Salad

I just love watermelon salad in the summer. The first time I heard of the combination of watermelon, mint, feta cheese, fresh lime, and olives I wasn't too sure of how it would be. However, I gave it a try and it is DELICIOUS! I thought I would not only share the recipe but also how perfect the Urban Lily papers were for this recipe layout. My layout is 6x6. I also cut the watermelons on my Silhouette.

Ingredients for Watermelon Salad:
• 4 cups watermelon, cubed
• 1/4 cups pitted olives
• 3 tablespoons fresh lime juice
• 1/4 cup finely chopped fresh mint
• 1/2 cup / 2 ounces feta cheese, crumbled
Combine the fresh lime juice, watermelon, olives, and mint. Cover and chill for at least 1 hour. Sprinkle your watermelon salad with cheese and serve. If you prefer to make your salad into a meal, serve the watermelon salad over your favorite greens.
